what's old is new.... Rice Krispie Treats

I'm baaaaack.....unfortunately this isn't the greatest picture to headline my return to blogging, but trust me,  this is good.   When is the last time you had a homemade rice krispy treat? 

This recipe has inspired me to blog again, how's that for a plug.  I made these for a dinner party last weekend, and they were such a hit, that (after a little tweaking) I couldn't wait to share. They're  a grown-up version of a childhood favorite, with a bit of added heat, and a smidge of salt to counter the sugary sweet marshmallows. I hope you'll love them.

As an added bonus, these are gluten and dairy free!



New Fashioned "Rice Krispie's" Treats


Ingredients:
8 oz coconut oil - melted
10 oz marshmallows
12 oz box puffed brown rice cereal
1/2 tsp cayenne pepper *the tweak
flaky sea salt ( I prefer Maldon for it's flake)

Directions:
-Melt coconut oil in large saucepan  
-Add the marshmallows
-sprinkle w/ cayenne pepper
-mix with spatula (wooden spoon will be too sticky) until the marshmallows are melted and the mixture is homogenious

-pour the 1/2 the rice krispies into a bowl, then drizzle with half of the marshmallow mixture.  Mix/stir with the spatula until all of the cereal is coated. Add the 2nd half of the cereal, the remaining marshmallow mixture and continue to stir /mix until everything is one big sticky mess.

-this is the one time when you SHOULD NOT USE YOUR HANDS!  Its simply too sticky.  You will regret it :).  ( I tried, and i did regre).

-grease a pan/cookie sheet( I use coconut oil spray, but Pam would also work...) The pan size you choose will determine the thickness of your treats...

-using the spatula transfer the sticky mess of marshmallow and cereal to the baking sheet.  Then, still using the spatula, press the mixture into the cookie sheet, as evenly as possible.

-finish with a sprinkle of  sea salt.

-once the mixture has cooled, cut into squares (or whatever shape you like)... and enjoy...

Frankly, I paired mine with red wine - and it was good.
